  • 1 cup cornmeal (or half cornmeal, half breadcrumbs)

  • 1 teaspoon paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¼ teaspoon cayenne pepper (optional, for heat)

For the Wet Coating

  • 2 large eggs

  • ½ cup buttermilk (or regular milk)

For Frying

  • Vegetable oil, canola oil, or peanut oil (enough for shallow frying)

Optional for Serving

  • Fresh parsley

  • Ranch dressing, remoulade, or garlic aioli


Step 1: Prepare the Tomatoes

Wash the green tomatoes thoroughly and pat them dry. Using a sharp knife, slice them into rounds about ¼-inch thick. Try to keep the slices even so they cook uniformly.

Lay the tomato slices on a paper towel or tray and lightly sprinkle both sides with salt and pepper. Let them rest for about 10 minutes. This step helps draw out excess moisture, allowing the breading to stick better and fry up crispier.


Step 2: Set Up the Breading Station

To make breading easy and mess-free, set up three shallow bowls:

  1. Flour Bowl: Add the all-purpose flour.

  2. Egg Mixture: Whisk together the eggs and buttermilk until smooth.

  3. Cornmeal Coating: In the third bowl, mix cornmeal, paprika, garlic powder, onion powder, cayenne pepper, and a pinch of salt.

This classic three-step process ensures a thick, crunchy coating that won’t fall off during frying.


Step 3: Bread the Tomato Slices

Working one slice at a time, dredge each tomato slice in flour, shaking off any excess. Next, dip it into the egg mixture, allowing any extra to drip off. Finally, coat it generously in the seasoned cornmeal mixture, pressing gently so the coating adheres well.

Step 4: Heat the Oil

Avoid overheating the oil, as it can burn the coating before the tomatoes cook through.


Step 5: Fry the Tomatoes

Carefully place the breaded tomato slices into the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.

Cook each slice for 2–3 minutes per side, or until golden brown and crispy. Flip gently using tongs or a spatula.

Once done, transfer the fried tomatoes to a plate lined with paper towels to drain excess oil.


Step 6: Serve Immediately
